MY FAVORITE TORTILLA CHIPS

My favorite tortilla chips are "Mi Nina" made by New England Tortilla, Inc. of Brockton, Massachusetts.   The grind their own corn, which REALLY makes a difference.  These chips aren't cheap, normally going for $6 to $7 a bag in the stores where I've seen them, but well worth their asking price.   The best part: the ingredients.   

The "Pico De Gallo" flavor was a real surprise, probably the best tasting snack chip I've ever had, no kidding.

This is a classic dish with many variation throughout Asia, and it's surprisingly easy to make.  

This is the first time I've ever seen Jeremy use a CAST IRON WOK on his show!  I'd be more than happy to have one in my house!   Lodge makes a good one that you can get for about $50.   

I have got to make this for myself!   But I will need to get some of the ingredients from Amazon first.   They are a good source for Asian pantry items.  

Beef and Mushroom in Black Pepper Sauce

The newest recipe from Mandy at "Souped up Recipes".  As soon as I saw this, I had to make it myself, and did so.   It really tastes wonderful!   

I substituted regular button mushrooms for the fancy ones Mandy uses, sliced thin, and cut my onions into much smaller strips than the large "scoops" that Mandy uses, and cooked them both until the mushrooms and onions caramelized.  For the beef, I used flank steak and prepped it and cooked it almost exactly as Mandy recommends.   

The biggest difference: I used the carbon-steel wok that Mandy sells to prep everything!   Her wok is fantastic!  I've even purchased it for other friends and relatives.   For an oil-fried dish like this, a wok is actually the better way to go.   

After everything was cooked, I served it over Jasmine rice.   It was really good!   But I do recommend cutting the amount of pepper used by half.

Saw this recipe come across my YouTube feed, and I knew I had to make it.   It was AMAZING.  Really nice and crispy chicken.   You don't even need the sauce and cheese, the breaded chicken cutlets would be fine all by themselves!   

The simple sauce Ashley makes using canned tomatoes was very tasty.   As a matter of fact, it was so good that I cooked up a batch of fresh linguine and used the sauce for the noodles.   It was wonderful!   

Highly recommended.  

BEEF CHOW FUN

A wonderful beef & noodle stir fry from the Woks of Life website.

"Beef chow fun is a sleeping favorite among Chinese food lovers. The problem is, the traditional version isn’t widely available, and there aren’t many good recipes out there (until now!).

"Beef chow fun is a Cantonese dish made from stir-frying beef, wide rice noodles (he fen or huo fun), scallions, ginger, bean sprouts and dark soy sauce. "

PAD SEE EWE

"Pad See Ewe" is one of my favorite noodle dishes, and is fairly easy to make yourself, if you can find the noodles!   Of course fresh rice noodles are the best, if you can find them (or make them), but I use regular dried noodles, which are much easier to find.  

To make it even better, use sauces sourced from Thailand.
